What color are your dishes?
What color are your counter tops?
Do you have art you would like in the room?

Pick your color from something else in your room.

Don't let anyone convince you to paint in a color that you are unsure of. Get lots samples from the local hardware store & tape them to the wall to see what you like. The colors will look different under your lighting. If you like it, try it. Remember it is only paint & if you hate it, it isn't that expensive to re paint.

I heard a designer say he went into peoples closets to see what colors they liked & designed rooms based on what he saw.
References :
My sister painted her kitchen a nice warm, terra cotta-ish orange. She has cabinets that are light oak coloured. It looks fantastic but that said, it suits her apartment since it's in Montreal - it's from the turn of the century and is pretty artsy. It's such a warm colour that you want to spend hours sitting around the table with friends and family! I was there when she was picking the colour - and it was somewhat difficult because you need to get just the right shade that will go with the cabinets, and something that works with the lighting. I am going to do something similar in my kitchen (from the 50s) but unfortunately the shade she used isn't quite right in my kitchen.

A great site to check out is BEHR.com. You can play with colours on sample kitchens - or even upload a picture of your kitchen into the site and change around colours. It costs money though, so I haven't done it...

cheers!
References :
Do a light beige color, like "polar bear" by sherwin williams:
http://sherlink.sherwin.com/swapp/color_visualizer/index.jsp

It's simple, not too trendy that will go out of style next year, and it will match any accessories that you already have (towles, coffee maker, curtains, etc).

Check out some of these kitchen makeovers that HGTV did with the same color scheme:

The darker the wood the lighter you should go to bring out the cabinets and the rest of your kitchen. I think a pale yellow color would look prefect with your dark oak cabinets. Yellow would not only make it look better, it would also make your kitchen more cozy and warm. For example: If you had those dark cabinets and then you used a dark paint color, like brown, your kitchen would look bland and have no warmth. But with a lighter color, you can bring out the color of the cabinets and create warmth.
Good Luck and have fun! :0)
References :
I have seen every imaginable color.... Try to tie it into the other colors you are using or the accessories..(cuisunart, toaster, blender, etc). If you have a colored frig or stove maybe pick a lighter shade picking up those colors... Geometrics or a splash of tile above the counters is also a great way to show some color. Curtains and blinds too.
remember if you use a bright color such as red as an example, you will tire of it soon... Warm colors are always nice though. What ever you do make sure you don't use yellow... They wash out the oak and make it look a bit sickly.
References :
We have oak cabinates also and I have a color called strawberry malt by bear on my walls. Its a really soft beigey pink color it isnt really bright either. I would suggest if you dont know what color to paint getting some of the paint cards from the store and putting them up to the cabinates to see how they look. Also go with a color that makes you happy.
References :
I would say if they are light oak cabinets that you should stick to neutral shades of tans. Maybe even a nice butter color or a faint lime if you absolutely need color.
